It is considered one of the most iconic breads of the Caucasus, often used to wrap cheese, herbs, or grilled meats. Its preparation reflects centuries‑old communal baking traditions.

  3. Cover and let rise for 1 hour.
  4. Divide dough into portions, roll out thin sheets.
  5. Traditionally, press dough against the hot walls of a clay oven.
  6. Alternatively, bake on a preheated baking stone at 220°C for 8–10 minutes until golden.
