Kubdari – Georgian Meat‑Filled Bread Recipe

Georgian steampunk recipes — classic dishes reimagined with storytelling and flavor.

Intro/Story

In the Chrononaut’s iron oven, Kubdari emerges as a bread of power. Stuffed with spiced meat, its aroma mingles with the hiss of steam pipes and the glow of copper lanterns – a hearty invention forged for explorers of time and taste.

Kubdari (Georgian: კუბდარი) is a traditional bread from the Svaneti region of Georgia. It is filled with seasoned meat, typically beef or pork, mixed with onions and spices. Unlike cheese‑based khachapuri, Kubdari is a robust, savory bread that reflects the mountain cuisine of Svaneti. It is considered one of Georgia’s most iconic filled breads, often prepared for festive occasions and family gatherings.
