Unlike the larger Imeretian or Adjarian styles, Gurian Khachapuri are crescent‑shaped pastries, filled with cheese and sometimes boiled egg, symbolizing festivity and sharing. The pastry/bread is named after Guria, a small, sparsely populated coastal region in Georgia known for its famous citizen Eduard Shevardnadze. Although it is located near regions with a high prevalence of khachapuri recipes, the locals actually call it guruli gvezeli (Gurian cake).

Ingredients

  • 500 g all‑purpose flour
  • 250 ml warm milk
  • 1 egg
  • 1 tsp sugar
  • 1 tsp salt
  • 7 g dry yeast
  • 200 g sulguni or mozzarella cheese (grated)
  • 2 boiled eggs (optional, chopped)
  • 50 g butter

Preparation

  1. Dissolve yeast in warm milk with sugar, let rest 10 minutes.
  2. Mix flour, salt, egg, and yeast mixture into a soft dough. Knead until smooth.
  3. Cover and let rise for 1 hour.
  4. Roll dough into circles, fill with cheese (and optional egg).
  5. Fold into crescent shapes, seal edges.
  6. Bake at 200°C for 20–25 minutes until golden.
  7. Brush with melted butter before serving.
