Shotis Puri (Georgian: შოთის პური) is one of Georgia’s most traditional breads, baked in a clay oven called a tone. The dough is pressed against the hot inner walls of the oven, producing elongated loaves with a crisp crust and soft interior. It is considered a staple of Georgian cuisine, often served with cheese, stews, or grilled meats. The preparation reflects centuries‑old baking traditions that remain central to Georgian food culture.

Ingredients

  • 500 g all‑purpose flour
  • 250 ml warm water
  • 1 tsp salt
  • 7 g dry yeast
  • 1 tsp sugar

Preparation

  1. Dissolve yeast in warm water with sugar, let rest 10 minutes.
  2. Mix flour and salt, add yeast mixture, knead into smooth dough.
  3. Cover and let rise for 1 hour.
  4. Divide into elongated loaves.
  5. Traditionally, press dough against the hot walls of a clay oven (tone).
