Svanetian Khachapuri is a regional variation from Svaneti, a mountainous area in northwestern Georgia. Unlike other types, it is often prepared as a flat, round bread filled with cheese and flavored with the famous Svanetian salt – a traditional spice mix containing coriander, fenugreek, garlic, and other herbs. Khachapuri (Georgian: ხაჭაპური) is considered one of Georgia’s most famous national dishes, with each region offering its own distinctive type. The Svanetian version reflects the culinary traditions of the highlands, combining hearty dough with aromatic seasoning.

Ingredients

  • 500 g all‑purpose flour
  • 250 ml warm milk
  • 1 egg
  • 1 tsp sugar
  • 1 tsp salt
  • 7 g dry yeast
  • 200 g sulguni or mozzarella cheese (grated)
  • 1 tbsp Svanetian salt (or mix of coriander, fenugreek, garlic, dill, salt)
  • 50 g butter

Preparation

  1. Dissolve yeast in warm milk with sugar, let rest 10 minutes.
  2. Mix flour, salt, egg, and yeast mixture into a soft dough. Knead until smooth.
  3. Cover and let rise for 1 hour.
  4. Prepare filling: mix grated cheese with Svanetian salt.
  5. Roll dough into circles, place filling in center, fold edges over, then flatten into a round disk.
  6. Bake at 200°C for 20–25 minutes until golden.
  7. Brush with melted butter before serving.
