Rachuli Khachapuri is a regional variation from Racha, a mountainous area in northwestern Georgia. Unlike other types, it is often prepared with beans or special cheese blends, reflecting the agricultural traditions of the region. Khachapuri (Georgian: ხაჭაპური) is considered one of Georgia’s most famous national dishes, with each region offering its own distinctive type. The Rachuli version is known for its hearty fillings and rustic character, making it a staple of festive and everyday meals alike.

Ingredients

  • 500 g all‑purpose flour
  • 250 ml warm milk
  • 1 egg
  • 1 tsp sugar
  • 1 tsp salt
  • 7 g dry yeast
  • 200 g sulguni or mozzarella cheese (grated)
  • 150 g cooked beans (mashed, red or white)
  • 50 g butter

Preparation

  1. Dissolve yeast in warm milk with sugar, let rest 10 minutes.

  5. Roll dough into circles, place filling in center, fold edges over, then flatten into a round disk.
  6. Bake at 200°C for 20–25 minutes until golden.
  7. Brush with melted butter before serving.
