Chrononaut’s Kharcho – A classic Georgian beef stew

Intro/Story

When time travelers journey through the centuries, they need a dish that provides strength and warmth. Kharcho is a Georgian classic that bridges the past and the future with meat, rice, and spices. In the Chrononauts version, it is served with walnuts and steampunk details—a main course for long journeys.

Megrelian kharcho is a traditional Georgian beef stew from the Samegrelo region. Tender braised meat is refined with tomatoes, onions, garlic, and the typical spice mixture Kharcho Suneli. Walnuts and cornmeal give the dish its characteristic thickness and depth of flavor. As a warming soup, Kharcho is especially popular in the cool fall and winter months and is traditionally served with fresh Shoti bread and herbs.

Ingredients (serves 4)

  • 600 g beef (shoulder or brisket, diced)
  • 150 g rice
  • 2 onions, chopped
  • 3 garlic cloves
  • 400 g tomatoes (fresh or canned)
  • 100 g walnuts, ground
  • 2 tbsp tkemali (plum sauce, optional)
  • 1 tsp coriander powder
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt & pepper
  • Fresh herbs (coriander or parsley) for garnish

Preparation

  1. Brown the meat in a large pot until it takes on color.
  2. Add the onions and garlic and sauté until translucent.
  3. Stir in the tomatoes and spices, then fill with water or broth.
  4. Add the rice and simmer until the meat and rice are cooked.
  5. Stir in the walnuts and tkemali, season to taste.
  6. Garnish with fresh herbs and serve hot.
